Coffee drinking is a richly pleasurable experience; one in which we explore and tap our finely tuned senses like taste and smell to optimize enjoyment of each delectable sip.
And an integral part of ensuring we provide customers with the finest available coffees is an intricate process called cupping.
In essence, cupping involves using our senses to identify and categorize:
- WHAT WE TASTE as our palate explores the complex flavors
- THE AFTER-TASTE that lingers
- THE AROMAS of freshly brewed coffee that heighten the myriad of relaxing sensations
Coffee beans exhibit flavor notes characteristic of their growing regions. At Airis, we identify those unique coffees that embody the best and most authentic characteristics from the world’s finest coffee-growing regions —across farms, micro-lots within farms and co-ops.
To ensure consistency, we set a baseline that each coffee we choose must exceed. We also identify coffees that deliver better flavor when blended with other coffees than when brewed alone.
Cupping coffee is a continually ongoing process. Only after countless rounds of roasting, grinding, brewing, sniffing, slurping and spitting do we select coffees that are exceptional enough to bear the name Airis.
