


Hailing from the Jinotega Region of Nicaragua is our latest Airis coffee offering. Jinotega is another one of those famed coffee growing regions that has the perfect weather, soil, altitude, and a coffee growing community with a long heritage of producing phenomenal coffees. Our Nicaragua coffee is grown on the Los Milagros farm run by Don Isidro. Don Isidro has gained a reputation for growing really high quality caturra coffees. We are excited to air roast this remarkable coffee and share it with you.
We were introduced to this Nicaraguan coffee from Ben Weiner; founder of Gold Mountain Coffee Growers. We met Ben several times at specialty coffee shows and are really excited to be able to offer one of his coffees. Ben’s company helps facilitate direct relationships between many fantastic Nicaraguan coffee growers with some of the very best coffee roasters. Many of those coffee roasters have won numerous awards and competitions using these Nicaraguan Coffees.
What’s most impressive is their focus on the environment and social initiatives. For one thing, they bought a rainforest just to protect it. They also focus on the coffee growing communities themselves. Among many of the impactful things they do is that they provide financial credit where none is given so farmers can reinvest in their farms. They also work with farmers on education so that they can grow better crops and fight off diseases to ensure their crops will be there year after year.
Now getting back to our featured coffee. About 2 months ago, Ben sent us a variety of samples from his latest Specialty Coffee show in Germany. All of the samples were excellent, but we all gravitated to the Don Isidro Mulled Red Wine Samples. This coffee truly tastes like what it was called. To us, this coffee was the equivalent of a cabernet. It was full bodied, had rich cherry and plum characteristics and very long lingering finish. For those coffee drinkers that enjoy being hit with a huge bold flavored coffee; this Nicaragua coffee is it. It is a coffee unlike anything else that we currently offer in our Airis Coffee line.
Lastly, I can’t speak enough how much our Air Roasting coffee process amplifies the flavors of this coffee. Ben had sent us pre-roasted samples. Once we received our micro lot of Don Isidro coffee, we took it to our coffee lab and started the process of finding the right roast for this particular coffee. We air roasted this coffee over 8 different ways until we found a light/medium roast profile that we feel brought out the best flavor. We calculate how we apply heat; adjusting the air to bean temp differentials. Each variable adjust produces a slightly different result.
The end result of this air roasted coffee is truly a very vibrant coffee. This air roasted nicaragua coffee is not subtle or delicate, it has strong lingering flavors. You will notice cherries, orange, and even some plum. This coffee a winey characteristic with medium acidity, a deep syrupy body, and long lingering aftertaste. In the ground aroma there is a sweet peachy and orange smell. This coffee is truly a delight. We hope that you will give this coffee a chance.
