Advanced Air Roasting Technology
Coffee is grown at very high elevations, often on the steep mountain sides of hard-to-reach places. The flavors and aromas you experience in your cup are very much a reflection of the land and methods the farmers used to grow their crop. At Airis, it is our commitment to highlight each bean’s unique properties in a way that only allows the bright, clean and natural flavors to shine through — without any impediments or “off tastes” that can develop during the traditional roasting process.
To that end, we employ a very sophisticated process: Advanced air roasting technology.
Ninety-nine percent of all coffee is roasted on a drum roaster. The drum of a roaster is heated. As the drum spins, the beans circulate within the drum and are heated by directly coming in contact with the metal of the drum as well as the surrounding hot air created from the drum. The problem is that there can be a variance of 100 degrees between the air temperature and the drum temperature. It is this variance that creates uneven roasts and searing, which add burnt and bitter tastes to your brew.
Our advanced air roasting technology produces the most evenly and consistently roasted coffee beans. To put it simply, strong jets of hot air are blown through the roasting chamber, levitating the coffee beans and keeping them suspended in a bed of hot air for the duration of the roasting process. This process allows for the most even transfer of heat to the bean, which in turn creates the most consistently and evenly roasted coffee beans.
Our advanced air roasting technology achieves the cleanest and brightest flavor notes. Every coffee bean has an inner parchment called silver skin. As the coffee is roasted, the silver skin becomes chaff and falls off the bean during roasting. Our custom-built air roaster collects 100% of the chaff, leaving a perfectly clean coffee bean. In traditional drum roasting, the chaff can spontaneously combust when the bean touches the metal drum, which creates the by-product of carbon and smoke. This, in turn, will create a sheath over the bean that can overlay and “mask” many of the intricate, subtle flavors of that bean.
Our custom-built air roaster has elevated the process of air roasting. We have incorporated the most-advanced air roasting technology. Our roaster is able take an accurate bean temperature ten times per second, which enables us to stop the roasting process at precisely the optimal time to achieve the best characteristics of each particular bean and replicate our recipes over and over again for unmatched consistency.
Our air roaster is immune from the issues caused by moisture. We’re able to stop roasting at precisely the right time — each and every time — since our process is immune from fluctuating atmospheric conditions that would otherwise dictate various cooking cycle durations.
Our small-batch processing allows us to economically customize our coffees to our customers’ individual tastes. We’re unique in our capability to create and “lock in” the perfect recipe for a particular bean in our sample roaster and then scale that recipe to our large production roaster in one seamless system. Since the coffee matches the specified recipe, it’s guaranteed to taste exactly as intended from the very first roast.
